Instructions

  1. Combine flour, eggs, and milk in a mixing bowl, whisking until smooth and lump-free. Refrigerate batter overnight to enhance flavor and texture.
  2. Preheat oven to 220°C. Place a small amount of fat in each tin and heat until it reaches smoking point, ensuring an ultra-crispy exterior.
  3. Quickly and carefully pour chilled batter into extremely hot fat-coated tins, filling each about halfway.
  4. Bake puddings for 20-25 minutes until they dramatically rise and turn golden brown with crisp edges.
  5. Open oven door briefly to release steam, then reduce temperature to 200°C to stabilize internal structure.
  6. Continue baking for additional 5-7 minutes until puddings are completely puffed and deep golden color.
