Description

Rich French Alpine “Tartiflette” merges creamy Reblochon cheese with crispy potatoes and smoky bacon in a hearty mountain-inspired dish. Comfort meets culinary tradition, inviting you to savor France’s rustic winter cuisine with each delectable, melty bite.

Ingredients

Scale

Main Ingredients:

  • 2.5 pounds (1.13 kilograms) potatoes, peeled
  • 1 pound (454 grams) Reblochon-style cheese, sliced
  • 0.5 pound (227 grams) slab of bacon, cut into small dice

Supporting Ingredients:

  • 1 medium onion, thinly sliced
  • 3/4 cup (180 milliliters) dry white wine

Seasoning:

  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat the oven to 350°F and prepare a medium pot for boiling potatoes. Submerge potatoes in water and simmer for approximately 20 minutes until fork-tender.
  2. Drain potatoes and allow them to cool slightly. Slice the cooled potatoes into even chunks.
  3. In a skillet, render bacon over medium heat until crisp. Remove bacon, reserving 1 tablespoon of grease. Sauté onions in the same pan until caramelized and golden, about 5 minutes.
  4. Return bacon to the skillet, pour in wine, and simmer for 5 minutes. Incorporate sliced potatoes and season with salt and pepper.
  5. Transfer half of the potato-bacon mixture into an ovenproof dish. Layer with half of the cheese, creating an even base.
  6. Top the first cheese layer with remaining potato mixture, then finish with the final cheese layer. Bake for 20 minutes until the surface turns golden and the edges bubble enthusiastically.
  7. Remove from oven and let rest for 5 minutes before serving. Enjoy the tartiflette warm as a hearty, comforting dish.

Notes

  • Choose waxy potatoes like Yukon Gold for the best texture and flavor, ensuring they hold their shape during cooking.
  • Rinse bacon grease can be substituted with olive oil for a lighter version, perfect for health-conscious cooks.
  • Consider using a cast-iron skillet for even heat distribution and a beautiful golden-brown crust on the tartiflette.
  • For a vegetarian twist, replace bacon with smoked mushrooms or caramelized leeks to maintain a rich, savory profile.
