Description

Delicate Spinach Roulade rolls with elegant French culinary finesse, presenting a light and savory dish perfect for sophisticated gatherings. Crisp spinach layers wrapped around creamy herbed filling promise a delightful experience you’ll savor with each delectable bite.

Ingredients

Scale

Main Ingredients:

  • 2 x 200 grams (14 ounces) spinach
  • 5 large eggs, separated
  • 150 grams (5.3 ounces) garlic & herb boursin

Flour and Thickening Ingredients:

  • 3 tablespoons self-raising flour
  • 200 grams (7 ounces) full-fat fromage frais

Garnish and Flavor Enhancers:

  • Grated vegetarian parmesan-style cheese
  • 1012 sundried tomatoes, chopped

Instructions

  1. Wilt fresh spinach in microwave, then thoroughly drain excess moisture by pressing through a fine-mesh sieve.
  2. Pulse drained spinach with egg yolks, flour, salt, pepper, and a dollop of creamy fromage frais until smooth and uniform in texture.
  3. Separately whip egg whites until they form rigid, glossy peaks that hold their shape when the whisk is lifted.
  4. Gently incorporate whipped egg whites into spinach mixture using a delicate folding technique to maintain airiness.
  5. Transfer batter to a parchment-lined baking tray, spreading evenly and smoothing the surface with a spatula.
  6. Bake in preheated oven at 190°C for 12-15 minutes until edges are lightly golden and center is set but still springy.
  7. While roulade cools, blend Boursin cheese with remaining fromage frais until creamy and well combined.
  8. Invert baked roulade onto fresh parchment paper lightly dusted with grated cheese, carefully peeling off original lining.
  9. Spread cheese mixture evenly across surface, leaving small border around edges.
  10. Scatter chopped tomatoes over cheese layer for added freshness and color.
  11. Carefully roll roulade from one end, using parchment paper as a guide to create tight, even cylinder.
  12. Slice into elegant rounds and serve either warm or chilled as an appetizer or light lunch.

Notes

  • Always squeeze spinach thoroughly to remove excess moisture, preventing a soggy roulade texture.
  • Use room temperature eggs for better volume when whisking egg whites to stiff peaks.
  • Gently fold egg whites to maintain their airiness and prevent deflating the delicate mixture.
  • For a gluten-free version, replace wheat flour with almond or rice flour to accommodate dietary restrictions.
  • Consider adding fresh herbs like dill or chives to the filling for extra flavor complexity.
  • Roll the roulade while still warm to prevent cracking and ensure a smooth, elegant presentation.
  • Can be prepared ahead and chilled, making it perfect for make-ahead entertaining or quick meals.
