Description

Hearty Southern sausage, gravy, and biscuit pie brings comfort straight from grandma’s kitchen to your dinner table. Flaky layers of buttery biscuits embrace savory sausage and creamy gravy, creating a classic comfort dish you’ll crave again and again.

Ingredients

Scale

main ingredients:

  • 1 lb ground sausage
  • 2 cups all-purpose flour
  • 1 cup buttermilk
  • 1/2 cup unsalted butter

gravy ingredients:

  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 tsp black pepper
  • 1/2 tsp salt

additional ingredients:

  • 1 large egg
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp vegetable oil

Instructions

  1. Preheat the oven to 375°F and prepare a 9-inch pie dish with a light coating of vegetable oil.
  2. In a large skillet, brown the ground sausage over medium-high heat, breaking it into crumbly pieces until fully cooked and no pink remains, approximately 8-10 minutes.
  3. Remove the sausage from the skillet, leaving behind the rendered fat, and set the meat aside.
  4. Create the gravy by whisking flour into the sausage drippings, cooking for 2-3 minutes to eliminate raw flour taste.
  5. Gradually pour in whole milk, continuously whisking to prevent lumps, and simmer until the mixture thickens and becomes smooth.
  6. Season the gravy with black pepper and salt, then fold in the cooked sausage and remove from heat.
  7. For the biscuit crust, combine flour, baking powder, and baking soda in a mixing bowl.
  8. Cut cold butter into the dry ingredients using a pastry cutter until the mixture resembles coarse crumbs.
  9. Pour in buttermilk and gently mix until a soft dough forms, being careful not to overmix.
  10. Divide the dough, using approximately two-thirds for the bottom crust and one-third for the top.
  11. Roll out the bottom crust and carefully transfer it into the prepared pie dish, pressing to cover the bottom and sides.
  12. Pour the sausage gravy mixture evenly over the bottom crust.
  13. Roll out the remaining dough and create a top crust, cutting small vents for steam release.
  14. Whisk the egg and brush it over the top crust for a golden finish.
  15. Bake for 30-35 minutes until the crust turns golden brown and the filling is bubbling.
  16. Allow the pie to cool for 10 minutes before serving to let the filling set.

Notes

  • Swap ground sausage with turkey or plant-based alternatives for a lighter, healthier version that maintains rich flavor profiles.
  • Experiment with different cheese blends like sharp cheddar or smoked gouda mixed into the gravy for extra depth and complexity.
  • Use gluten-free flour and baking mix to transform this recipe into a celiac-friendly comfort dish without sacrificing traditional taste.
  • Create smaller individual pot pies by dividing the mixture into ramekins for personalized serving options that are perfect for meal prep or entertaining.
