Description

Irresistible Mediterranean fig cake whispers rustic charm from southern Italian kitchens. Sweet layers of fresh figs and almond flour create a delightful dessert you’ll savor with pure Mediterranean pleasure.

Ingredients

Scale

Main Fruits:

  • 10 to 12 fresh figs

Dry Ingredients:

  • 2 cups (240 grams) all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 0.5 teaspoon ground ginger

Wet Ingredients:

  • 0.5 cup (113 grams) unsalted butter, softened
  • 1 cup (220 grams) brown sugar
  • 3 large eggs
  • 0.5 cup (120 milliliters) milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the oven at 175°C (350°F) and prepare the cake tin by greasing and dusting with flour to prevent sticking.
  2. Carefully remove the stems from figs and slice or quarter them into uniform pieces.
  3. Combine flour, baking powder, cinnamon, and ginger in a mixing bowl, whisking to ensure even distribution of spices.
  4. Using an electric mixer, cream butter and sugar until light, fluffy, and pale in color.
  5. Incorporate eggs individually into the butter mixture, thoroughly blending after each addition to maintain a smooth consistency.
  6. Gently fold dry ingredients and milk into the butter mixture, alternating between the two to create a balanced batter.
  7. Stir in vanilla extract and gently fold most of the prepared fig pieces into the batter.
  8. Transfer the batter to the prepared cake tin, spreading evenly and arranging remaining fig slices decoratively on top.
  9. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool completely in the tin before removing and serving to ensure proper texture and easy slicing.

Notes

  • Choose ripe, sweet figs for the most intense flavor and natural sweetness in your cake.
  • Use room temperature eggs and butter to ensure smoother batter and more even baking.
  • Dust the fig slices with a little flour before folding into the batter to prevent sinking during baking.
  • For a gluten-free version, substitute all-purpose flour with almond or coconut flour and add xanthan gum for better texture.
