Ingredients

Scale

Main Ingredients:

  • 200 grams (7.05 ounces) Madeira or sponge cake, crumbled
  • 150 grams (5.29 ounces) broken plain biscuits, crushed
  • 100 grams (3.53 ounces) dark chocolate, melted

Dried Fruits and Preserves:

  • 100 grams (3.53 ounces) seedless raisins, finely chopped
  • 4 tablespoons apricot jam, warmed

Additional Ingredients:

  • 23 tablespoons rum
  • 2 x 55 grams (2 x 1.94 ounces) chocolate strands or vermicelli

Instructions

  1. Prepare 40 petit four cases on a clean, flat surface.
  2. In a spacious mixing bowl, combine crumbled cake, crushed biscuits, chopped raisins, jam, and rum, ensuring thorough integration of ingredients.
  3. Pour melted chocolate over the mixture, gently folding until every component is evenly coated and glossy.
  4. Using clean hands, delicately form small, uniform spheres approximately one inch in diameter.
  5. Carefully roll each truffle in fine chocolate vermicelli, creating a textured exterior coating.
  6. Gently place truffles into individual petit four cases, maintaining consistent spacing.
  7. Transfer the prepared truffles to the refrigerator and allow them to chill for a minimum of 60 minutes, enabling them to set and develop a rich, firm consistency.

Notes

  • Choose high-quality dark chocolate for richer flavor and smoother texture.
  • Crush biscuits finely to ensure even distribution and better binding of ingredients.
  • Use room temperature ingredients to help mixture blend more smoothly.
  • Chill truffles longer than an hour for firmer consistency and easier handling.
