Description

Rich Baileys Cheesecake promises a luxurious dessert experience that blends creamy Irish cream with classic cheesecake indulgence. Silky layers meld chocolate and cream cheese into a delectable treat you’ll savor with each heavenly bite.

Ingredients

Scale

Cheesecake Base:

  • 250 grams (8.8 ounces) digestive biscuits
  • 100 grams (3.5 ounces) unsalted butter

Cheesecake Filling:

  • 450 grams (15.9 ounces) mascarpone cheese
  • 225 grams (7.9 ounces) cream cheese
  • 150 milliliters (5.1 fluid ounces) Baileys Irish Cream
  • 200 milliliters (6.8 fluid ounces) double cream
  • 100 grams (3.5 ounces) icing sugar

Decoration:

  • 60 grams (2.1 ounces) dark chocolate

Instructions

  1. Gently melt butter in a saucepan over low heat, ensuring it doesn’t burn.
  2. Pulverize biscuits into fine crumbs using a food processor or rolling pin.
  3. Thoroughly combine crushed biscuits with melted butter until the mixture holds together.
  4. Transfer the buttery crumb mixture into a springform pan, pressing firmly and evenly across the bottom.
  5. Refrigerate the base for approximately 60 minutes to allow it to firm up.
  6. In a large mixing bowl, whisk mascarpone, cream cheese, icing sugar, and Baileys until achieving a silky, uniform consistency.
  7. In a separate bowl, carefully whip cream until soft, billowy peaks form.
  8. Delicately incorporate whipped cream into the cheese mixture, folding gently to maintain airiness.
  9. Carefully spread the creamy filling over the chilled biscuit base, smoothing the surface with a spatula.
  10. Return the cheesecake to the refrigerator and chill for 120 minutes or until completely set.
  11. Using a fine grater, create chocolate shavings.
  12. Sprinkle chocolate shavings over the cheesecake for an elegant finish.
  13. Carefully release the cheesecake from the springform pan, slice, and serve chilled.

Notes

  • Achieve a perfectly smooth base by pressing biscuit mixture firmly and evenly into the tin using the back of a spoon.
  • Prevent cream from splitting by ensuring all ingredients are at room temperature before mixing.
  • Reduce sugar content by using less icing sugar or replacing with a natural sweetener for a lighter version.
  • Keep cheesecake fresh by storing in an airtight container in the refrigerator for up to 3-4 days.
