Description

Delightful apple muffins promise a sweet morning escape with warm cinnamon and fresh fruit notes. Homemade comfort awaits you in each tender, spiced bite of this classic breakfast treat.

Ingredients

Scale

Main Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1.5 cups (220g) diced apple
  • 2 large eggs
  • 1/2 cup (113g) unsalted butter, at room temperature

Sugars:

  • 1/2 cup (110g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (55g) light brown sugar
  • 1/4 cup (50g) granulated sugar

Other Ingredients:

  • 1/2 cup (120ml) whole milk
  • 3 tablespoons (43g) unsalted butter, melted
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons ground cinnamon
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 200C (400F) and prepare a 12-hole muffin tin with grease or paper liners.
  2. Create the crumble topping by combining flour, sugars, and cinnamon, then mixing with melted butter until it forms a coarse, crumbly texture.
  3. Whisk together flour, baking powder, cinnamon, and salt in a separate mixing bowl.
  4. Coat apple chunks with a small amount of flour mixture to prevent sinking during baking.
  5. Cream butter and sugars until light and fluffy, approximately 2 minutes.
  6. Incorporate eggs individually, beating thoroughly after each addition, then mix in vanilla extract.
  7. Gradually blend dry ingredients and milk into the butter mixture, alternating in thirds. Mix gently to maintain a thick, spoonable batter.
  8. Carefully fold apple chunks into the prepared batter.
  9. Fill muffin cups nearly to the top with batter.
  10. Generously sprinkle crumble topping over each muffin, using about 1-2 heaping tablespoons per cup.
  11. Bake initially at 200C for 10 minutes, then reduce temperature to 175C and continue baking 12-15 minutes until a skewer shows minimal moist crumbs.
  12. Allow muffins to rest in the tin for 10 minutes before transferring to a wire rack for complete cooling.

Notes

  • Prevent apple sinking by tossing chunks in flour before adding to batter, ensuring even distribution throughout the muffins.
  • Avoid overmixing the batter to maintain a tender, soft texture; stop mixing when ingredients are just combined.
  • Adjust spices like cinnamon or add nutmeg for enhanced autumn-inspired flavor profile.
  • Create gluten-free version by substituting regular flour with almond or oat flour, maintaining similar moisture and texture.
